Strawberry Rhubarb Pie: Live Online

Tuition: $25 per household

Celebrate the spring season with a traditional lard-crust strawberry rhubarb pie. Participants will be provided alternative ingredient list and instructions if they eat a vegetarian diet requiring a butter crust. 

The class tuition is per household. You can have as many cooks as your kitchen can hold. Ingredients and supplies lists will be sent upon registration. 

About the Instructor: Lacey Squier loves cooking food of all kinds. She is an amateur cook who spends much of her free time learning how to recreate dishes from her favorite restaurant and travel experiences. It is liberating to realize you can have anything you want for dinner ... as long as you're willing to make it yourself!

When not experimenting with food at home (and making a huge mess of her kitchen), Lacey likes to take walks or go on a hike with her spouse, Eric, and their dog Wendell. Lacey works at Ely Family Dental and serves as Chair of the Ely Folk School Board.

Celebrate the spring season with a traditional lard crust strawberry rhubarb pie. Participants will be provided an alternative ingredient list and instructions if they eat a vegetarian diet requiring a butter crust. 

Each participant will be working to make their own pie to take home! All ingredients and supplies are provided. The kitchen classroom at the Ely Folk School has been apportioned to allow proper distancing between work spaces. 

This class will be held in person with limited seats available. Masks should be worn and social distancing observed. In addition to adhering to CDC and Minnesota State guidelines, the Ely Folk School is monitoring local public health.

Baking with Chef Boy-Aren't-You-Hungry!

Nothing is quite as satisfying after a long day of paddling than eating a great tasting meal by the campfire. Don't get into the trap of bring pre-packaged meals - backcountry cooking doesn't have to be complicated!

In this class you will learn about different types of bread and baked goods you can make with basic bulk ingredients you travel with when camping. After an introduction to backcountry baking, we will proceed to making individual pizzas!

Each student will receive the supplies and expert tips necessary to create and consume their own individual pizza. Students need only bring a notebook for ideas, recipes, and tips learned during class.

This class will take place in person, with limited capacity at the Ely Folk School. In addition to adhering to CDC and Minnesota State guidelines, the Ely Folk School is monitoring local public health.

About the Instructor: Alexia Springer says, "I've been on all sides of wilderness trips- a student, an instructor, a program coordinator, and on my own personal expeditions. I often tire of the same old mac and cheese or dehydrated food that is often easily prepared and rapidly consumed. Making fresh baked products is an amazing tool for boosting group morale!"

Blueberry Hand Pies: Live Online

These butter-crust hand pies can be made in bulk and frozen either before they've been baked or after. Prep ahead to have at the ready to bring as a shareable treat when you're called to an impromptu summer bonfire with friends. Join us in community via Zoom no matter how ripe the blueberries are in your hometown. 

The ingredient and supplies list will be sent to registrants two weeks prior to class.

These butter crust hand pies can be made in bulk and frozen either before they've been baked or after. Prep ahead to have at the ready to bring as a shareable treat when you're called to an impromptu summer bonfire with friends.

Participants will leave class with eight uncooked, ready to freeze hand pies! All ingredients and supplies are provided. 

This class will be held in person with limited seats available. Masks should be worn and social distancing observed. In addition to adhering to CDC and Minnesota State guidelines, the Ely Folk School is monitoring local public health.
